Cheesy Garlic Biscuits

These biscuits are the ones you get at Red Lobster.  If you put mine side by side with theirs, you COULD NOT TELL THE DIFFERENCE.  They are soft, moist & cheesy.  They melt in your mouth.







Ingredients:

  • 1 1/4 c. Bisquick Mix
  • 1/2 shredded cheddar cheese
  • 1/2 c. water
Bake @ 400 degrees for 11 minutes. 

Ingredients for topping
  • 1/2 stick melted butter
  • 1/4 t. garlic powder
  • 1/4 t. salt
  • 1/4 teaspoon parsley
Brush on top of hot biscuits.  Serve hot.

PMC Fried Chicken

The picture is my PMC ((Paula Mary Clark)) Fried Chicken.  The chicken is moist, thin crusted & juicy.  My recipe is below.










Ingredients:

  • 3 eggs
  • 1/3 c. skim milk
  • 2 T.  favorite hot sauce
  • 2 c. self-rising flour
  • 1 t. pepper
  •  House seasoning ((recipe below)) 
        • 1 T of each of these ingredients
        • Rosemary
        • Marjoram
        • Crushed Mint
        • Herbs de Provence
        • Seasoning Salt
        • Salt
        • Pepper
        • dash of White Pepper
        • Basil
  •  2 lbs, thawed chicken breast, cut vertically down the middle
  • Oil, for frying, preferably vegetable oil
Directions:

In a medium bowl, beat the eggs with the milk.  Add enough hot sauce so the egg mixture is bright orange.  In another bowl, combine the flour and pepper.  Mix in the house seasoning into the flour/pepper mixture.  Mix well.  Season the chicken with salt and pepper.  Dip the seasoned chicken in the egg mixture and then coat well in the flour mixture.

Heat the oil to 350 degrees in a deep skillet.  Do not fill the pot more than 1/2 full with oil.

Fry the chicken in the oil until brown and crispy.  My chicken cooked in approximately 6 minutes.

Drain on paper towel.

I served my chicken with shells and cheese, garlic cheesy biscuits, and cantaloupe.
